Just wanted to share what I made for dinner tonight, as it was pretty delicious! For an appetizer, I made Baked Zucchini Chips. A little healthier than deep fried like you would get at a restaurant. Since they were baked as opposed to being fried, they weren’t as crispy as I would have liked, but they were still very tasty! I served them with ranch dressing and Cody ate almost all of them.

I also made Cheesy Basil Stuffed Chicken and a Sweet & Red Potato Mash. You NEED to try them, they were both amazing- we both agreed one of the best chicken dishes I’ve made. So juicy and flavorful! The mashed potatoes were different, but in a good way. I used greek yogurt, but I think next time I’ll use the sour cream. I’d definitely make both dishes again.

Below is the recipe for the zucchini chips, with a few phone pics:

  • 2 medium zucchini, sliced thin
  • 2 tablespoons salt
  • 1/3 cup bread crumbs
  • 1/4 cup grated Parmesan
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 2 tablespoons milk
  • non-stick spray

             

1. Preheat oven to 450 degrees. Add zucchini and salt to a colander, toss well. Let sit for 15 - 20 minutes. Press out any extra water and then rinse very well under running water.

2. Add zucchini to a bowl with milk and toss well. In another bowl, add bread crumbs, Parmesan cheese, onion powder, garlic powder, dried basil and dried oregano. Add zucchini and toss in breadcrumb mixture, coating each side.

3. Spray a baking sheet with non-stick spray. Place zucchini chips in a single layer on sheet and spray the tops of the zucchini with non-stick spray. Bake for 5 - 7 minutes and then flip, and bake for 5 - 7 minutes more.
